- Preheat the oven to 325°F (165°C). In a medium bowl, mix the butter, sugar, and 1 cup of flour together. Press it into the bottom of an ungreased 9×13-inch pan.
- Bake for 25 minutes. Meanwhile, in a small saucepan, bring the apricots and water to a boil and cook for 10 minutes. Drain, chop, and set aside to cool.
- In a medium bowl, beat the eggs and brown sugar. Stir in the 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in the walnuts and chopped apricots. Stir in the coconut, if using. Pour over the pre-baked crust.
